Preparation Steps
  1. In a medium bowl, gather your ingredients: chia seeds, coconut milk, cocoa powder, low-carb sweetener, vanilla extract, and salt. Pour in the coconut milk first, followed by the chia seeds and dry ingredients.
  2. Using a whisk or spoon, stir the mixture until fully combined. Let it sit for 5 minutes, then stir again. Cover and refrigerate for at least 4 hours or overnight.
  3. For a smoother texture, blend the mixture in a high-powered blender for about 30 seconds. Adjust sweetness or consistency if desired.
  4. Scoop the pudding into bowls and add your favorite toppings like cacao nibs, coconut shreds, or whipped cream.
