Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a stand mixer, combine the room-temperature butter and granulated sugar. Beat on medium-high speed for about 3 minutes until light and fluffy.
  3. Add egg and vanilla extract, mixing on low speed for about 30 seconds until combined.
  4. Gradually add baking powder, salt, and flour, mixing on low until just combined. Do not overmix.
  5. Using a cookie scoop, form large dough balls and roll them in the cinnamon and sugar mixture.
  6. Place 6-8 dough balls on each lined baking sheet and bake for 10-13 minutes or until edges are lightly golden.
