Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Add diced yellow onion and sauté for 5 minutes until soft. Add minced garlic and cook for 1 minute more.
  3. Pour in the whole peeled tomatoes, crushing them gently in the skillet. Sprinkle in dried oregano, red pepper flakes, salt, and pepper. Let simmer for 10-12 minutes.
  4. Stir in the drained white beans, mixing gently. Cook for another 5 minutes until heated through.
  5. Sprinkle shredded mozzarella and grated Parmesan over the mixture. Transfer to the oven and bake for about 10-15 minutes until cheese is melted and golden.
  6. Remove from oven, let cool slightly, and garnish with fresh basil or parsley before serving.
