Step-by-Step Instructions
  1. Start by placing the diced potatoes in a large pot and covering them with salted water. Bring to a boil over high heat and cook for 10-15 minutes until fork-tender. Drain and set aside.
  2. Heat a skillet over medium and add butter. Once melted, add boiled potatoes and cook them for 5-7 minutes until golden brown and crispy, stirring occasionally.
  3. If using ham or bacon, add it to the skillet with the sautéed potatoes and cook for an additional 2-3 minutes until heated through.
  4. In a medium bowl, whisk together the eggs, milk, salt, and pepper until smooth and frothy. Set aside.
  5. Pour the egg mixture evenly over the potato and meat in the skillet. Cook without stirring for about 5 minutes until edges start to set, then gently stir and cook for another 2 minutes.
  6. Sprinkle cheese on top, cover, and lower heat, cooking for another 2-3 minutes until cheese melts.
  7. Remove from heat and garnish with green onions or chives before serving warm alongside toast or fresh fruit.
