Preparation Steps
  1. Brown the Beef: Add the ground beef to a large skillet over medium heat. Cook for about 5-7 minutes until no longer pink and browned. Drain excess fat.
  2. Sauté the Vegetables: Stir in chopped onions, carrots, and celery with the browned beef. Cook for another 5-7 minutes until the vegetables soften.
  3. Prepare the Potatoes: Peel and dice potatoes into small, even pieces, keeping them in cold water.
  4. Mix the Casserole Filling: In a mixing bowl, combine the cooked beef and vegetable mixture with drained potatoes, cream of mushroom soup, and seasonings. Stir well.
  5. Assemble the Casserole: Transfer the mixture to a greased baking dish, cover with aluminum foil and bake at 375°F for 45 minutes.
  6. Add the Cheese: Remove the foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is melted and bubbly.
  7. Let It Rest: Remove from oven and let rest for 5-10 minutes before slicing.
