In a separate bowl, prepare the cheesecake filling by mixing the softened cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth and creamy.
To assemble the cookies, take a tablespoon of cookie dough and flatten it in your hand. Place a teaspoon of cheesecake filling in the center, then wrap the cookie dough around the filling, sealing it completely. Roll into a ball and place on the prepared baking sheet.
Repeat with the remaining dough and filling.
Bake for 10-12 minutes, or until the edges are golden brown.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
