Marination and Cooking
- In a large bowl, combine jerk seasoning, olive oil, lime juice, minced garlic, salt, and pepper. Mix well until fully combined.
- Add the chicken thighs, ensuring each piece is thoroughly coated in the marinade. Cover the bowl and allow to marinate in the refrigerator for at least 1 hour or overnight.
- While the chicken marinates, prepare the pineapple salsa by mixing fresh pineapple, red bell pepper, red onion, jalapeño, cilantro, additional lime juice, and a pinch of salt.
- Preheat your grill to medium-high heat, around 400°F (200°C). If using a grill pan, heat it over medium-high heat.
- Remove the chicken from the marinade, allowing excess to drip off. Place on the grill and cook for 7-9 minutes on each side until fully cooked.
- Once cooked, let the chicken rest for 5 minutes before slicing and serving topped with pineapple salsa.
Notes
Allow marinating overnight for deeper flavor infusion. Use a meat thermometer to ensure chicken is cooked through.
