Method

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil over high heat. Add 12 oz of pasta and cook until al dente, about 8-10 minutes. Reserve ½ cup of the starchy pasta water, then drain the pasta and set aside.
  2. In a large skillet, melt 2 tablespoons of unsalted butter with 2 tablespoons of olive oil over medium heat. Add sliced leeks, stirring occasionally for about 12-15 minutes until golden brown and fragrant.
  3. Stir in 8 oz of sliced mushrooms, cooking for another 6-8 minutes. Add minced garlic and sauté for an extra minute until fragrant.
  4. Lower the heat and pour in ½ cup of heavy cream. Gradually stir in half of the shredded Gruyere cheese, mixing until it melts and forms a creamy sauce, about 2-3 minutes.
  5. Add the drained pasta to the skillet, gently tossing to coat with the creamy sauce. Adjust consistency with reserved pasta water if necessary, then stir in remaining Gruyere cheese and season with salt and pepper.
  6. Serve hot, garnished with chopped parsley if desired. Pair with a side salad or garlic bread for a complete meal.

Notes

For the best flavor, ensure leeks are cooked on medium heat for proper caramelization. Feel free to experiment with different cheeses and vegetables as desired.
