For the Marinade
  • 4 pieces Chicken Breasts boneless, skinless
  • 4 cloves Garlic minced
  • 2 tablespoons Balsamic Vinegar
  • 2 tablespoons Olive Oil extra virgin
  • 1 teaspoon Italian Seasoning
  • to taste Salt
  • to taste Pepper
For the Topping
  • 8 ounces Fresh Mozzarella Cheese slices
  • 1 cup Plum or Grape Tomatoes diced
  • 2 pieces Avocados ripe
  • ¼ cup Fresh Basil chopped
  • 2 tablespoons Lemon Juice freshly squeezed
  • to taste Dash of Salt
  • to taste Dash of Pepper

Method
 

Marinating and Preparing
  1. In a large bowl, combine the chicken breasts with garlic, balsamic vinegar, olive oil, Italian seasoning, salt, and pepper. Stir to coat. Cover and refrigerate for at least 30 minutes.
  2. While chicken marinates, prepare the salsa by dicing avocados and halving tomatoes. Mix with basil, olive oil, lemon juice, salt, and pepper. Set aside in the fridge.
Grilling and Serving
  1. Preheat grill to medium-high. Grill the marinated chicken for 8-10 minutes per side until cooked through and juices run clear.
  2. Remove from heat and top each grilled chicken breast with mozzarella. Serve topped with avocado tomato salsa.
