Method
 

Cooking Instructions
  1. Heat a large skillet over medium heat and add a drizzle of olive oil.
  2. Season chicken chunks with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Sauté for 5-7 minutes until golden brown and fully cooked. Set aside.
  3. In the same skillet, melt butter and sauté minced garlic for about 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth, mixing well to combine, bringing to a gentle simmer.
  5. Gradually add mozzarella, Parmesan, and cheddar cheeses, stirring until melted and smooth.
  6. Cook rotini pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain.
  7. Add drained pasta to the cheese sauce, tossing to coat. Use reserved pasta water to adjust sauce consistency if needed.
  8. Return sautéed chicken to the skillet and heat everything through for 2-3 minutes.
  9. Garnish with chopped parsley and serve warm.
