  • 1 cup cooked brown rice
  • 1 cup chopped romaine lettuce
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup blue cheese crumbles
  • 1/4 cup ranch dressing
  • 1 avocado sliced
  • Salt and pepper to taste

Method
 

  1. In a medium bowl, combine the shredded chicken with the buffalo sauce. Mix until the chicken is well-coated.
  2. In serving bowls, layer the cooked brown rice as the base.
  3. Top the rice with the buffalo chicken mixture.
  4. Add the chopped romaine lettuce, cherry tomatoes, and shredded cheddar cheese on top of the chicken.
  5. Sprinkle blue cheese crumbles over the entire bowl.
  6. Drizzle ranch dressing over each bowl and add sliced avocado.
  7. Season with salt and pepper to taste.
