Ingredients
  

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup cooked brown rice
  • 1 cup chopped romaine lettuce
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 1/4 cup sliced green onions
  • Salt and pepper to taste

Method
 

  1. In a medium bowl, combine the cooked shredded chicken and buffalo sauce. Mix well until the chicken is evenly coated.
  2. In a serving bowl, layer the cooked brown rice as the base.
  3. Top the rice with the buffalo chicken mixture.
  4. Add the chopped romaine lettuce and cherry tomatoes on top of the chicken.
  5. Sprinkle shredded cheddar cheese over the salad.
  6. Drizzle ranch dressing over the entire bowl.
  7. Garnish with sliced green onions and season with salt and pepper to taste.
  8. Serve immediately and enjoy!
