Preheat your oven to 375°F (190°C).
Place the split English muffins on a baking sheet, cut side up.
Spread about 2 tablespoons of pizza sauce on each muffin half.
Sprinkle shredded mozzarella cheese evenly over the sauce on each muffin.
In a small bowl, crack the eggs and season with Italian seasoning, salt, and pepper.
Carefully crack one egg onto each muffin half, taking care not to break the yolk. If using sausage or ham, sprinkle it around the egg.
Bake in the preheated oven for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your liking.
Remove from the oven and let cool for a minute. Garnish with fresh basil or parsley if desired.
