Ingredients
  

  • 1 cup pizza sauce
  • 4 English muffins split in half
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1/2 cup cooked and crumbled breakfast sausage
  • 1/4 cup diced bell peppers any color
  • 1/4 cup sliced black olives
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Place the split English muffins on a baking sheet, cut side up.
  3. Spread about 2 tablespoons of pizza sauce on each muffin half.
  4. Sprinkle shredded mozzarella cheese evenly over the sauce on each muffin.
  5. In a skillet, cook the eggs sunny-side up or scrambled, seasoning with salt and pepper.
  6. While the eggs are cooking, sprinkle the cooked sausage, bell peppers, and black olives over the cheese on each muffin.
  7. Once the eggs are ready, place one egg on top of each muffin half.
  8. Sprinkle Italian seasoning over the top of each muffin.
  9. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a couple of minutes. Garnish with fresh basil leaves if desired.
