- In a blender, combine the cottage cheese, eggs, melted coconut oil, maple syrup, and vanilla extract. Blend until smooth.
- In a separate mixing bowl, whisk together the rolled oats, sweetener, and baking powder. Ensure the ingredients are well combined.
- Pour the blended cottage cheese mixture into the bowl with the dry ingredients. Mix gently, adding just enough milk until the batter reaches a spreadable consistency.
- Line a quarter sheet pan with parchment paper and mist it with cooking spray. Spread the batter evenly into the prepared pan.
- Evenly distribute the fresh or frozen blueberries over the top of the batter, gently pressing them in slightly. Sprinkle flaked almonds or mixed seeds over the surface.
