Step-by-Step Instructions
  1. In a blender, combine the cottage cheese, eggs, melted coconut oil, maple syrup, and vanilla extract. Blend until smooth.
  2. In a separate mixing bowl, whisk together the rolled oats, sweetener, and baking powder. Ensure the ingredients are well combined.
  3. Pour the blended cottage cheese mixture into the bowl with the dry ingredients. Mix gently, adding just enough milk until the batter reaches a spreadable consistency.
  4. Line a quarter sheet pan with parchment paper and mist it with cooking spray. Spread the batter evenly into the prepared pan.
  5. Evenly distribute the fresh or frozen blueberries over the top of the batter, gently pressing them in slightly. Sprinkle flaked almonds or mixed seeds over the surface.
