  • 2 tablespoons Butter Used to candy the walnuts; can replace with olive oil for dairy-free.
  • 1 cup Walnuts Provides crunch; pecans can be swapped.
  • 6 cups Mixed Lettuce Greens Base of the salad; arugula or spinach can be used.

  • 1/2 medium Red Onion Adds sharpness and color; can be replaced with shallots.
  • 1/2 cup Dried Cherries/Raisins/Cranberries Adds sweetness; can be used interchangeably.
  • 1 medium Apple Provides sweetness; pear can be used as a substitute.
For the Dressing
  • 1 teaspoon Kosher Salt Enhances flavors; sea salt can be used.
  • 1 teaspoon Black Pepper Adds heat; freshly ground offers best flavor.
  • 2 tablespoons Dijon Mustard Provides tangy base; whole grain adds rustic touch.
  • 1 tablespoon Maple Syrup Adds sweetness; honey is a good alternative.
  • 1/4 cup Red Wine Vinegar Adds acidity; can substitute with apple cider vinegar.
  • 1/2 cup Olive Oil Used for emulsifying dressing; avocado oil is lighter.

Equipment

  • Sheet Pan
  • skillet
  • jar with lid

Method

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Arrange bacon strips on a sheet pan and cook for about 20 minutes, flipping halfway through.
  2. In a skillet, melt 2 tablespoons of butter over medium-low heat. Add 1 cup of walnuts and ¼ cup of brown sugar, cooking until fragrant.
  3. Combine 2 tablespoons of Dijon mustard, 1 tablespoon of maple syrup, ¼ cup of red wine vinegar, and ½ cup of olive oil in a jar. Add salt and pepper, and shake well.
  4. Create a bed of mixed lettuce greens. Layer with crispy bacon, candied walnuts, red onion, dried fruit, and sliced apples.
  5. Sprinkle crumbled blue cheese over the salad. Drizzle dressing, and gently toss to combine.
  6. Serve immediately to keep apples crisp and greens fresh. Store dressing separately if there are leftovers.

Notes

Assemble salad just before serving for freshness. Experiment with cheese substitutions to suit your taste.
