Ingredients

  • 2 cups fresh blackberries
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 1/4 cup granulated sugar
  • 1 cup water
  • 1 bottle 750 ml Prosecco, chilled
  • Ice cubes

Method

  1. In a small saucepan, combine the blackberries, mint leaves, sugar, and water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves and the blackberries begin to break down, about 5 minutes.
  2. Remove the saucepan from heat and let the mixture cool for about 15 minutes. Strain the mixture through a fine-mesh sieve into a bowl, pressing the solids to extract as much liquid as possible. Discard the solids.
  3. Fill glasses halfway with ice cubes. Pour about 2 ounces of the blackberry-mint syrup into each glass.
  4. Top each glass with Prosecco, gently stirring to combine.
  5. Garnish with additional mint leaves and a few whole blackberries, if desired. Serve immediately.

Notes

  • To make a non-alcoholic version, substitute Prosecco with sparkling water or a lemon-lime soda.
  • For a sweeter drink, add more sugar to the blackberry-mint syrup or use flavored sparkling water.
