Method
- In a bowl, mix the shredded chicken with BBQ sauce until well coated.
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
- Add half of the BBQ chicken mixture and top with some red onion and cilantro.
- Fold the tortilla over and cook until golden brown, about 3-4 minutes.
- Flip and cook the other side until golden and the cheese is melted.
- Remove from skillet and repeat with the remaining ingredients.
- Cut into wedges and serve warm.
