Ingredients
  

  • 1 pound salmon fillet skin removed and cut into bite-sized cubes
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 tablespoon lemon juice
  • Chopped green onions for garnish

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the panko breadcrumbs, garlic powder, paprika, salt, and black pepper.
  3. Place the flour in another shallow bowl and the beaten eggs in a third bowl.
  4. Dip each salmon cube first into the flour, shaking off any excess, then into the beaten eggs, and finally coat with the panko mixture. Place the coated salmon bites on the prepared baking sheet.
  5. Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through and the coating is golden brown.
  6. While the salmon bites are baking, prepare the bang bang sauce by mixing together the mayonnaise, sweet chili sauce, sriracha, and lemon juice in a small bowl.
  7. Once the salmon bites are done, remove them from the oven and let them cool for a couple of minutes. Serve warm with the bang bang sauce drizzled on top or on the side for dipping. Garnish with chopped green onions.
