Method

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add 1 finely sliced onion and sauté until it becomes translucent, about 3-4 minutes. Then, stir in 2 minced garlic cloves and cook for an additional 30 seconds.
  2. Incorporate 2 cups of thawed and drained spinach into the skillet, stirring it in with the sautéed onion and garlic for 2-3 minutes. Season with salt and pepper to taste, and then fold in ½ cup of sour cream.
  3. Preheat your oven to 175°C (347°F). Season the salmon fillets with salt and pepper on both sides. In a separate pan, sear each fillet for about 2 minutes skin-side down.
  4. Grease a baking dish with olive oil and lay the cooked salmon skin-side down. Spread the creamy spinach mixture over the top and sprinkle 1 cup of shredded mozzarella cheese evenly.
  5. Bake for 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 63°C (145°F).
  6. Let the salmon rest for a few minutes before serving with a crisp salad or roasted asparagus.

Notes

Ensure the salmon reaches an internal temperature of 145°F (63°C) for best results.
