Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the buttermilk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the chicken pieces and stir to coat. Let it marinate for at least 30 minutes in the refrigerator.
  3. In a shallow dish, place the flour. In another shallow dish, add the panko breadcrumbs.
  4. Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in flour, shaking off the excess, then dip it back into the buttermilk mixture, and finally coat it with panko breadcrumbs. Place the coated chicken on the prepared baking sheet.
  5. Drizzle the olive oil over the chicken pieces. Bake for 20-25 minutes, or until the chicken is golden brown and cooked through.
  6. While the chicken is baking, mix the honey and BBQ sauce in a small bowl.
  7. Once the chicken is done, remove it from the oven and drizzle the honey BBQ sauce over the top. Return to the oven for an additional 5 minutes to caramelize the sauce.
  8. Serve warm and enjoy your delicious baked honey BBQ popcorn chicken!
