Ingredients
  

  • 200 g feta cheese
  • 300 g pasta penne or fusilli
  • 2 cups cherry tomatoes
  • 1 zucchini chopped
  • 1 bell pepper chopped
  • 3 cloves garlic minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, place the feta cheese in the center and surround it with cherry tomatoes, zucchini, and bell pepper.
  3. Drizzle olive oil over the vegetables and feta, then sprinkle with minced garlic, salt, and pepper.
  4. Bake in the preheated oven for 30 minutes, or until the vegetables are tender and the feta is golden.
  5. Meanwhile, cook the pasta according to package instructions until al dente.
  6. Once the feta and veggies are done, remove from the oven and mix everything together.
  7. Add the cooked pasta to the baking dish and toss to combine.
  8. Garnish with fresh basil before serving.
