Step-by-Step Instructions
  1. In a skillet, melt 1 tablespoon of butter over medium heat until it bubbles. Crack in 4 large eggs, then sprinkle with garlic powder, cayenne pepper, sea salt, and black pepper. Stir gently while cooking for about 3-5 minutes, until the eggs are fluffy and fully set. Remove them from the heat and set aside.
  2. Warm 4 flour tortillas on a dry skillet over low heat for about 30 seconds on each side until they become pliable. If you prefer, wrap them individually in a damp paper towel and microwave for 15-20 seconds.
  3. Lay each warm tortilla flat and spoon ½ cup of the scrambled eggs onto the center. Add ½ cup of roasted or pan-fried potatoes, followed by ¼ cup of grated cheddar cheese and ¼ cup of crispy bacon or cooked sausage. Fold in the sides of the tortilla and roll it tightly from the bottom up.
  4. In the same skillet, add a little more butter or oil and carefully place the burritos seam-side down. Cook for about 2-3 minutes on each side, until golden brown and crispy.
  5. Once golden and crispy, remove the burritos from the skillet and let them cool for a minute. Serve with salsa and sour cream for added flavor.
