Ingredients
  

  • 2 ripe avocados
  • 4 slices of whole grain bread
  • 1 cup cherry tomatoes halved
  • 4 ounces feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Method
 

  1. Toast the slices of whole grain bread until golden brown and crispy.
  2. While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
  3. Mash the avocados with a fork until creamy, then stir in the lemon juice, olive oil, salt, and pepper to taste.
  4. Spread the mashed avocado mixture evenly over the toasted bread slices.
  5. Top each slice with halved cherry tomatoes and crumbled feta cheese.
  6. Garnish with fresh basil leaves if desired. Serve immediately.
