- Preheat your oven to 400°F (200°C) and gather a large roasting pan.
- Combine red wine, extra virgin olive oil, beef short ribs, chopped onion, minced garlic, salt, and black pepper in the roasting pan. Roast for 1 hour and 30 minutes, stirring occasionally.
- Transfer the contents into a large stockpot, add remaining red wine, and simmer over medium heat for 30 minutes.
