Cooking Instructions
  1. In a large mixing bowl, crack the egg and add the Greek yogurt and half-and-half. Whisk until smooth and homogenous, ensuring there are no lumps.
  2. Gradually add the flour, baking powder, salt, sugar, cinnamon, and vanilla extract into the wet mixture. Mix gently until just combined and smooth.
  3. Peel, core, and grate the apple. Gently fold the grated apple into the pancake batter until evenly distributed.
  4. Preheat a non-stick skillet over medium heat and lightly grease it. Allow it to warm for about 2-3 minutes until shimmering.
  5. Pour ¼ cup of batter onto the hot skillet for each pancake. Cook for about 3-4 minutes, or until edges are set and bubbles form on the surface.
