- In a large mixing bowl, crack the egg and add the Greek yogurt and half-and-half. Whisk until smooth and homogenous, ensuring there are no lumps.
- Gradually add the flour, baking powder, salt, sugar, cinnamon, and vanilla extract into the wet mixture. Mix gently until just combined and smooth.
- Peel, core, and grate the apple. Gently fold the grated apple into the pancake batter until evenly distributed.
- Preheat a non-stick skillet over medium heat and lightly grease it. Allow it to warm for about 2-3 minutes until shimmering.
