Ingredients
  

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 cup brown sugar packed
  • 1 cup shredded coconut
  • 1/2 cup unsalted butter
  • 1/4 cup golden syrup or light corn syrup
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons water

Method
 

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, flour, brown sugar, shredded coconut, and salt.
  3. In a small saucepan, melt the butter and golden syrup over low heat. Stir until smooth.
  4. In a separate small bowl, mix the baking soda with the water until dissolved. Add this to the melted butter mixture and stir well.
  5. Pour the wet ingredients into the dry ingredients and mix until fully combined.
  6. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each cookie slightly with the back of a spoon.
  8. Bake for 10-12 minutes or until golden brown. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
