Ingredients
  

  • 8 ounces angel hair pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Cook the angel hair pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and fresh basil.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
