Ingredients
  

Sauce
  • 1 tablespoon Low sodium soy sauce Use low sodium to control salt levels.
  • 1 tablespoon Sesame seed oil Only a small amount is needed, adjust to taste.
  • 1 teaspoon Hot sauce Can be omitted for a milder dish.
Stir-Fry
  • ½ tablespoon Vegetable oil Can use canola or peanut oil.
  • 1 cup Red bell pepper Make sure to remove seeds and ribs before dicing.
  • 1 cup Diced ham Any leftover ham will work well.
  • 2 stalks Green onions Divide into white and green parts for sautéing and garnishing.
  • 2 cloves Garlic Use fresh minced garlic for the best taste.
Base
  • 3 cups Cold, cooked white rice Day-old rice is preferred for better frying texture.
  • 2 large Eggs Scramble them in the pan alongside the rice.
  • 1 cup Pineapple pieces Fresh pineapple can be used instead of canned for a fresher taste.

Method
 

Preparation Steps
  1. In a small bowl, whisk together low sodium soy sauce, sesame seed oil, and hot sauce if using. Set aside.
  2. Heat ½ tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add diced red bell pepper and sauté for 5–7 minutes until crisp-tender. Set aside.
  3. In the same skillet, add diced ham and white parts of green onions. Cook until slightly brown, then stir in minced garlic for another minute. Remove from skillet.
  4. Add remaining vegetable oil and cold, cooked white rice to the skillet. Stir-fry for about 8 minutes.
  5. Push rice to one side, crack large eggs into the skillet, and scramble until fully set. Mix with rice.
  6. Return sautéed ham mixture and bell pepper to the skillet. Pour prepared sauce over and mix well. Cook for 2 more minutes.
  7. Add pineapple pieces and green parts of green onions. Stir and heat through for 2 minutes.

Notes
