Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a lasagna pan with butter.
  2. In a large skillet, melt 4 tablespoons of butter over medium heat. Add thinly sliced onions, sprinkle with salt, and sauté for 20-25 minutes until caramelized.
  3. In a medium saucepan, melt 4 tablespoons of butter over low heat. Whisk in ¼ cup of flour and cook for 2-3 minutes until bubbly. Gradually add 2 cups of milk, whisking constantly for 5-7 minutes until thick.
  4. Spread a thin layer of béchamel on the bottom of the pan. Layer in noodles, caramelized onions, béchamel, and cheese. Repeat, finishing with cheese on top.
  5. Optionally, sprinkle croutons over the top layer for extra crunch.
  6. Bake the lasagna for 35-40 minutes until the cheese is melted and golden brown.
  7. Remove from the oven and let cool for 10 minutes before slicing.
