- Slice the smoked beef sausage into 1/4-inch rounds and set aside. Dice onion and red bell pepper into 1/2-inch pieces. Grate zucchini and pat dry.
- Heat olive oil in a large skillet over medium-high heat. Add sausage and sauté until browned, about 3-4 minutes.
- Add diced onion and bell pepper to the skillet; cook until onion is translucent, about 2-3 minutes.
- Stir in minced garlic and sauté for 30 seconds until fragrant.
- Add jasmine rice to the skillet, stirring constantly for 1-2 minutes.
- Pour in the chicken stock, bring to a gentle boil, reduce heat to low, cover, and cook for 18-20 minutes.
- Remove from heat, fluff rice with a fork, and fold in zucchini and shredded cheddar cheese.
