  • 1 medium Onion Diced.
  • 1 medium Red Bell Pepper Diced; any color can be used.
  • 2 cloves Garlic Minced; fresh is best.
  • 1 cup White Cheddar Cheese Shredded; can substitute with mozzarella.
  • 2 tablespoons Olive Oil Or any neutral oil.
For Serving
  • 1 cup Fresh Green Salad Topped with cherry tomatoes and light vinaigrette.
  • 1 loaf Crusty French Bread For soaking up sauce.

Method
 

Step-by-Step Instructions
  1. Slice the smoked beef sausage into 1/4-inch rounds and set aside. Dice onion and red bell pepper into 1/2-inch pieces. Grate zucchini and pat dry.
  2. Heat olive oil in a large skillet over medium-high heat. Add sausage and sauté until browned, about 3-4 minutes.
  3. Add diced onion and bell pepper to the skillet; cook until onion is translucent, about 2-3 minutes.
  4. Stir in minced garlic and sauté for 30 seconds until fragrant.
  5. Add jasmine rice to the skillet, stirring constantly for 1-2 minutes.
  6. Pour in the chicken stock, bring to a gentle boil, reduce heat to low, cover, and cook for 18-20 minutes.
  7. Remove from heat, fluff rice with a fork, and fold in zucchini and shredded cheddar cheese.
  8. Season with salt and pepper, serve warm or bake at 350°F for 10-15 minutes until bubbly.
