  • Salt to taste
  • Pepper to taste
  • 1 small head Green Cabbage cored and chopped
  • 2 cups Shredded Cheddar/Jack Cheese or dairy-free cheese

Step-by-Step Instructions
  1. Heat the oil in a Dutch oven or large skillet over medium-high heat until shimmering.
  2. Add ground beef, chopped sweet onion, and orange bell pepper. Cook for 5-7 minutes until browned.
  3. Stir in chopped garlic cloves and sauté for an additional minute until fragrant.
  4. Pour in fire-roasted diced tomatoes and add spices: smoked paprika, dried oregano, garlic powder, and onion powder. Mix well.
  5. Top the mixture with chopped green cabbage, fold together, and cover. Cook on low for 15-20 minutes until cabbage is tender.
  6. Sprinkle shredded cheese over the cabbage mixture, cover, and let melt for about 3-5 minutes.
