Cheesy Ground Beef Enchiladas: A Delicious Recipe Idea!

A delicious recipe for cheesy ground beef enchiladas that are easy to make and perfect for a family dinner.

Ingredients
  

  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can 15 ounces enchilada sauce
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream for serving
  • Chopped fresh cilantro for garnish

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  3. Stir in the chili powder, cumin, salt, and black pepper. Cook for an additional 2 minutes.
  4. Spread 1/2 cup of enchilada sauce on the bottom of a 9x13 inch baking dish.
  5. To assemble the enchiladas, place about 1/4 cup of the beef mixture in the center of each tortilla. Sprinkle with a little cheese, roll them up tightly, and place seam-side down in the baking dish.
  6. Once all tortillas are filled and placed in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  8. Let the enchiladas cool for a few minutes before serving. Top with sour cream and cilantro if desired.
