A refreshing and colorful parfait made with layers of watermelon, yogurt, and berries, perfect for summer.

- 4 cups watermelon, cubed
- 2 cups vanilla yogurt
- 1 cup blueberries
- 1 cup strawberries, sliced
- 1 tablespoon honey (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- Start by preparing the fruit. Cube the watermelon, slice the strawberries, and wash the blueberries.
- In a clear glass or parfait dish, layer 1 cup of watermelon cubes at the bottom.
- Add a layer of 1/2 cup of vanilla yogurt on top of the watermelon.
- Sprinkle 1/2 cup of blueberries over the yogurt.
- Add another layer of 1 cup of watermelon cubes.
- Top with another 1/2 cup of vanilla yogurt and then layer with 1/2 cup of sliced strawberries.
- Drizzle honey over the top layer if desired for added sweetness.
- Finish with a few fresh mint leaves for garnish.
- Repeat the layering process in additional glasses if making more servings.
Notes
- For a dairy-free option, substitute vanilla yogurt with coconut yogurt or almond yogurt.
- Add granola or crushed nuts between the layers for added crunch and texture.
