- 1 pound large shrimp, peeled and deveined
- 8 ounces lump crabmeat, drained and picked over for shells
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped fresh parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon Old Bay seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Lemon wedges for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the crabmeat, breadcrumbs, Parmesan cheese, mayonnaise, lemon juice, Dijon mustard, parsley, garlic powder, Old Bay seasoning, salt, and pepper. Mix gently until well combined.
- Take each shrimp and carefully butterfly it by slicing down the back, being careful not to cut all the way through. Open the shrimp slightly and place a spoonful of the crab mixture inside each one.
- Arrange the stuffed shrimp on a baking sheet. Drizzle with olive oil and sprinkle with additional salt and pepper if desired.
- Bake in the preheated oven for 15-20 minutes, or until the shrimp are cooked through and the topping is golden brown.
- Serve hot with lemon wedges on the side.
Notes
- For a spicy kick, add a teaspoon of hot sauce to the crab mixture.
- Substitute the crabmeat with cooked lobster or shrimp for a different flavor profile.
