Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 3 large eggs
  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the milk. Mix until just combined.
  5. Gently fold in the sliced strawberries and lemon juice.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. For the frosting, whisk together the powdered sugar and 2 tablespoons of milk until smooth. Adjust the consistency with more milk if necessary.
  10. Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer, then place the second layer on top and frost the top and sides of the cake.

Notes

  • For a lighter version, substitute half of the butter with unsweetened applesauce.
  • Add a layer of whipped cream and extra strawberries on top for a fresh touch.
