Ingredients

  • 1/4 cup chopped peanuts
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 12 tablespoons water (to thin, as needed)

Instructions

  1. In a large bowl, combine the mixed salad greens, shredded carrots, cucumber, red bell pepper, cooked shrimp or tofu, cilantro, and green onions. Toss gently to mix all the ingredients evenly.
  2. In a separate small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, and sesame oil until smooth. If the sauce is too thick, add water a little at a time until you reach your desired consistency.
  3. Drizzle the peanut sauce over the salad and toss gently to coat all the ingredients.
  4. Top the salad with chopped peanuts for added crunch.
  5. Serve immediately or chill in the refrigerator for about 15 minutes before serving for a refreshing taste.
