Description

A delicious and easy recipe for Spiral Sweet Potato Bake that combines sweet potatoes, cheese, and cream for a comforting dish.


Ingredients

  • 2 large sweet potatoes, peeled and spiralized or thinly sliced
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
  2. In a large bowl, combine the spiralized or sliced sweet potatoes, onion, and garlic. Toss with olive oil, thyme, paprika, salt, and pepper until well coated.
  3. Layer half of the sweet potato mixture in the prepared baking dish. Pour half of the heavy cream over the layer, then sprinkle with half of the cheddar cheese.
  4. Add the remaining sweet potato mixture on top, pour the rest of the heavy cream, and finish with the remaining cheddar cheese.
  5. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden brown.
  6. Allow to cool for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

  • For a healthier version, substitute half of the heavy cream with low-fat milk or unsweetened almond milk.
  • Add cooked and crumbled bacon or diced ham for extra flavor and protein.
