  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 bell pepper, sliced (any color)
  • 1 teaspoon black pepper (adjust to taste)
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a medium bowl, combine the chicken pieces, soy sauce, and cornstarch. Mix well and let marinate for 15-20 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced onion, garlic, and ginger. Stir-fry for 2-3 minutes until fragrant and the onion is translucent.
  4. Add the bell pepper and black pepper to the skillet, cooking for another 2-3 minutes until the pepper is tender.
  5. Return the chicken to the skillet and add the oyster sauce, rice vinegar, and sugar. Stir well to combine and heat through for another 2 minutes.
  6. Serve hot, garnished with chopped green onions.
