Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (optional, for thickening)
  • Cooked rice or quinoa, for serving
  • Sesame seeds and sliced green onions, for garnish

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the minced garlic and ginger to the skillet, stirring for about 1 minute until fragrant.
  3. Stir in the bell peppers, broccoli, and snap peas. Cook for another 3-5 minutes until the vegetables are tender-crisp.
  4. Pour in the teriyaki sauce and soy sauce, mixing well to coat the turkey and vegetables. If you prefer a thicker sauce, add the cornstarch mixture and stir until the sauce thickens, about 1-2 minutes.
  5. Drizzle with sesame oil and mix well. Remove from heat.
  6. Serve the stir-fry over cooked rice or quinoa, garnished with sesame seeds and sliced green onions.
