Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (for serving, optional)
  • Tortilla chips (for serving, optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until softened.
  2. Add the minced garlic and diced bell pepper to the skillet. Cook for an additional 3-4 minutes until the bell pepper is tender.
  3. Increase the heat to medium-high and add the ground turkey. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
  4. Stir in the black beans, diced tomatoes (with juices), taco seasoning, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld.
  5. Add the corn and stir to combine. Cook for another 2-3 minutes until heated through.
  6. Sprinkle the shredded cheddar cheese on top and cover the skillet. Let it sit for 2-3 minutes until the cheese is melted.
  7. Garnish with fresh cilantro and serve with sour cream and tortilla chips if desired.
