Description

Mini Turtle Cheesecakes are a delicious and easy dessert that combines a creamy cheesecake filling with a graham cracker crust, topped with chocolate, caramel, and pecans.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips
  • 1 cup caramel sauce
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 325°F. Line a muffin tin with paper liners.
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  3. Press about 1 tablespoon of the mixture into the bottom of each muffin liner to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  5. Gradually add powdered sugar and vanilla extract, mixing until well combined.
  6. Add the eggs one at a time, mixing on low speed until just incorporated.
  7. Spoon the cream cheese mixture over the crust in each muffin liner, filling them about 3/4 full.
  8. Bake for 20-25 minutes, or until the edges are set and the centers are slightly jiggly.
  9. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Once cooled, drizzle chocolate chips and caramel sauce over the top of each cheesecake. Sprinkle with chopped pecans.
  11. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a richer flavor, try adding a teaspoon of espresso powder to the cream cheese mixture.
  • You can substitute the pecans with walnuts or almonds for a different nutty taste.
