Mini McGriddle Bites are a delicious and easy-to-make breakfast treat that combines fluffy pancakes with savory sausage and cheese.

- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 cup cooked and crumbled breakfast sausage
- 1/2 cup shredded cheddar cheese
- 1/4 cup maple syrup (for drizzling)
Instructions
- Preheat your oven to 375°F and grease a mini muffin tin.
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In another bowl, combine the milk, egg, and melted butter, then mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the cooked sausage and shredded cheese until evenly distributed.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 12-15 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
- Allow the bites to cool for a few minutes before removing them from the tin. Drizzle with maple syrup before serving.
Notes
- For a sweeter version, add 1/4 teaspoon of cinnamon to the dry ingredients.
- Substitute the sausage with cooked bacon or turkey bacon for a different flavor profile.
