Ingredients
Scale
- 2 boneless, skinless chicken breasts (about 1 pound total)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1/4 cup chicken broth
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry with paper towels. Season both sides with salt, black pepper, garlic powder, onion powder, and smoked paprika.
- In an oven-safe skillet, heat the olive oil and butter over medium-high heat until the butter is melted and bubbling.
- Add the seasoned chicken breasts to the skillet and sear for about 4-5 minutes on each side until golden brown.
- Pour the chicken broth and lemon juice into the skillet around the chicken breasts.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove the skillet from the oven and let the chicken rest for 5 minutes before slicing.
- Garnish with chopped parsley before serving.
Notes
- For added flavor, marinate the chicken in the seasoning mix and lemon juice for 30 minutes before cooking.
- Try adding vegetables like asparagus or broccoli to the skillet during the last 10 minutes of baking for a complete meal.
