A delicious and healthy Mediterranean Rice Bowl packed with fresh vegetables, chickpeas, and a tangy dressing.
Ingredients

- 2 cups cooked brown rice
- 1 cup canned chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced (any color)
- 1/2 red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked brown rice, chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, olives, and parsley. Toss gently to mix all the ingredients evenly.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
- Pour the dressing over the rice mixture and toss again to coat all the ingredients evenly.
- Let the bowl sit for about 10 minutes to allow the flavors to meld, or refrigerate for up to an hour for a chilled option.
- Serve the Mediterranean rice bowl in individual bowls or on a large platter. Enjoy!

- For added protein, consider adding grilled chicken or shrimp on top of the rice bowl.
