Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup cherry tomatoes, halved
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.
  2. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add the orzo, cherry tomatoes, chicken broth, dried oregano, salt, and pepper. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally until the orzo is tender and most of the liquid is absorbed.
  4. Stir in the heavy cream and Parmesan cheese until well combined. Add the cooked shrimp back into the skillet and mix gently.
  5. Remove from heat and stir in fresh basil. Serve immediately.

Notes

  • For a lighter version, substitute half of the heavy cream with low-fat milk or use a dairy-free alternative.
  • You can also add spinach or kale to the dish for extra nutrients.
  • For a more robust flavor, consider adding a splash of white wine when cooking the shrimp.
