Mango Sticky Rice Delight is a delicious Thai dessert made with glutinous rice, coconut milk, and ripe mangoes, offering a perfect balance of sweetness and creaminess.

- 2 cups glutinous rice (also known as sticky rice)
- 1 ½ cups coconut milk
- ½ cup granulated sugar
- ½ teaspoon salt
- 2 ripe mangoes, peeled and sliced
- Sesame seeds or mung beans for garnish (optional)
Instructions
- Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results.
- Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 30-40 minutes, or until the rice is tender and sticky.
- While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves, but do not let it boil.
- Once the rice is cooked, transfer it to a large bowl and pour about 1 cup of the coconut milk mixture over it. Stir gently to combine. Let it sit for about 15-20 minutes to absorb the flavors.
- To serve, place a portion of the sticky rice on a plate, top with sliced mango, and drizzle with the remaining coconut milk mixture. Garnish with sesame seeds or mung beans if desired.
Notes
- For a richer flavor, add a teaspoon of vanilla extract to the coconut milk mixture.
- If you prefer a sweeter dish, increase the sugar to ¾ cup or serve with additional coconut milk drizzled on top.
