  • 8 ounces tortilla chips

  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1/2 cup sliced jalapeños (fresh or pickled)
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 1/2 cup sliced green onions

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Drain any excess fat from the skillet. Stir in the taco seasoning and water. Simmer for about 5 minutes until the mixture thickens.
  3. Preheat your oven to 350°F (175°C).
  4. On a large baking sheet, spread the tortilla chips in an even layer. Top with the seasoned beef, black beans, diced tomatoes, jalapeños, and shredded cheddar cheese.
  5. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let cool for a few minutes. Top with sour cream, diced avocado, chopped cilantro, and sliced green onions before serving.
