- 1 pound ground beef
- 1 tablespoon olive oil
- 1 packet taco seasoning (1 ounce)
- 1 cup water
- 8 ounces tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 cup diced tomatoes
- 1/2 cup sliced jalapeños (fresh or pickled)
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- 1/2 cup sliced green onions
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Drain any excess fat from the skillet. Stir in the taco seasoning and water. Simmer for about 5 minutes until the mixture thickens.
- Preheat your oven to 350°F (175°C).
- On a large baking sheet, spread the tortilla chips in an even layer. Top with the seasoned beef, black beans, diced tomatoes, jalapeños, and shredded cheddar cheese.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Top with sour cream, diced avocado, chopped cilantro, and sliced green onions before serving.
