- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
- 1 lemon, zested and juiced
- 1 cup low-sodium chicken broth
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, minced garlic, salt, black pepper, thyme, lemon zest, and lemon juice. Mix well to create a marinade.
- Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
- Heat a large oven-safe skillet over medium-high heat. Once hot, add the marinated chicken breasts and sear for about 3-4 minutes on each side until golden brown.
- Pour the chicken broth into the skillet around the chicken.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove the skillet from the oven and let the chicken rest for 5 minutes before slicing.
- Garnish with fresh parsley and serve with your choice of sides.
