- 2 pounds bone-in, skin-on chicken thighs
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, black pepper, paprika, and red pepper flakes.
- Add the chicken thighs to the bowl and toss until they are evenly coated with the marinade. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
- Arrange the marinated chicken thighs in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. An internal temperature of 165°F (75°C) should be reached.
- Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley before serving.
Notes
- For a smoky flavor, add 1 teaspoon of smoked paprika instead of regular paprika.
- Serve with a side of roasted vegetables or a fresh salad for a complete meal.
